Week 2 –  Day 12 Get Outside

Tip for the Day

Remember to spend at least 15 minutes outside in natural light every day. The little pineal gland behind your eyes needs Ultra Violet rays to regulate Melatonin and Seratonin. These Ultra Violet rays cannot bend around glasses or lenses, so remove them as you go outside. 

Melatonin and Seratonin are chemical transmitters that help you sleep well and feel happy. A great way to receive your daily dose of sunshine, is to have a meal outside when possible. 

Without sunshine it would be impossible to stay healthy, even plants die when they are not exposed to sunlight for some time. Our bodies need exposure to sunlight  to be able to synthesize vitamin D. This, in turn, helps your body to utilise calcium and lowers cholesterol.

If you want to stay awake during the day, sleep well at night, and not be depressed (without taking medication) take half an hour of natural sunlight.It is not addictive, has only positive side effects (unless exposure is excessive) and its free!

Recipe for the Day

Roasted Red Pepper and Artichoke Salad

1 lettuce, a mixture of red leaves, butter lettuce and baby spinach leaves is suggested

2 red bell peppers, lightly dry roasted in oven

6 artichoke hearts, pulled apart

1/2 cup of raw nuts, hazelnuts, cashews or almonds

100g/1.4 lbs gorgonzola/blue cheese (optional)

Juice of half a lemon or balsamic vinegar.

Mary-Ann’s Organic Herb Salt to taste.

Layer the ingredients on a salad platter, leaves first then the red peppers and artichokes. Sprinkle nuts and cheese and lastly olive oil, lemon juice and salt to taste.
