100 Days to Health - Day 5 | Vegetables

Week 1 –  Day 5 (Veg Out!)

Tip for the Day

Vegetables are best eaten raw or lightly steamed. A stainless steel retractable steamer or a bamboo steamer is particularly efficient and easy to use.

The next best are frozen vegetables, followed by additive-free canned varieties. I rarely use canned foods unless its for some variation for meals and salad toppings like asparagus,  artichokes and beans.

Recipe for the Day

Mexican Bean Dip

2 cups of cooked red beans or 1 tin drained (you can use any type of beans)

1/4 cup tomato puree

1-2 chillies (optional)

Juice of 1 lemon

1 tsp dried basil or fresh basil leaves

2 spring onions/shallots

1-2 stalks of celery

Blend all the ingredients until smooth, add a dash of extra-virgin olive oil before serving as a dip or spread.
